Breaded Shrimp with Tomato Sauce
- 1k large shrimp
- 250g breadcrumbs
- ½ cup of grated kefalotyri cheese
- 2 eggs, beaten
- some lemon juice
- salt, pepper and oil for frying
For the tomato sauce
- 1 onion, finely chopped
- 2 cloves garlic, finely chopped
- 500g. peeled and chopped tomatoes
- 4 tbs olive oil
- 125 ml white wine
- salt, pepper, some sugar
Wash the shrimp and remove the heads and shell leaving only the tail. Put them in a bowl with cold water. Leave the shrimp in cold water for 20'. Dry them thoroughly.
Mix the cheese with the breadcrumbs. Dip the shrimp first into the beaten eggs and then in the cheese-breadcrumbs mixture. Fry them in hot oil until golden brown.
Prepare the tomato sauce as follows: Heat the oil in a saucepan and saute onion and garlic. Add wine, sugar, tomatoes, salt and pepper. Boil the sauce for about 15' and serve it with the breaded shrimp by adding some lemon juice.
