Cheese croquettes (koftas) with feta cheese and ricotta
- 600 g. (21.2 oz) feta cheese
- 400 g. (14.1 oz) ricotta
- 1 tablespoon fresh mint, chopped
- 3 eggs
- a little salt
- olive oil or sunflower oil for frying
Put the cheeses in a bowl and stir them. Add the eggs, mint, salt and pepper and as much flour is needed, so that the mixture can be molded without sticking in the hands. Shape round small croquettes, until the mixture is exhausted.
Fry the cheese koftas in hot oil for about 5' minutes, until they turn golden brown. Remove the koftas from the pan with a slotted spoon and place them on a platter, paved with absorbent kitchen paper. Serve immediately.
