Ingredients

  • 1kg all-purpose flour
  • 4 tbsp olive oil
  • 4 tbsp sugar
  • 4 tbsp orange juice
  • 2 glasses of water
  • For the syrup:
  • 1 cup honey (plus a little more to decorate)
  • 1 cup sugar
  • roughly chopped walnuts
  • sesame
  • ground cinnamon

Directions

    1. In a bowl, mixx all the ingredients for the dough until you have a dough. Roll out the dough into a thin pastry, and cut into strips (25cmx 3cm approximately)

    2. In a deep pan, heat the olive oil. When hot, add the strips of dough, one by one, rolled into spirals. when golden, carefully turn the spirals over using a fork, careful not to lose the shape. 

    3. When done, remove each kserotigano and place on absorbent paper. 

    4. For the syrup, boil the sugar and water for 3 minutes, then add the honey and mix. Dip each kserotigano in the hot syrup and remove. Serve on a serving plate and sprinkle with nuts, sesame, cinnamon, and some extra honey.

Popular in several parts of Greece, including the Peloponnese and Crete, xerotigana (also known as diples) are served on festive occasions, including christmas, Easter, weddings, and baptisms.
