Ingredients

  • yellow split peas: ½ kg
  • onions: 4, finely chopped
  • olive oil: ½ cup and a bit extra for garnish
  • tomatoes: 2, ripe, firm, finely chopped
  • capers: 1-2 tablespoons
  • lemon juice: from 1 lemon
  • salt: a bit
  • pepper: freshly ground

Directions

  1. Heat the olive oil and sauté three of the finely chopped onions until they are wilted. Add the split peas and plenty of hot water (water should totally cover the split peas). Salt and pepper and let the fava boil for 50 minutes, stirring frequently. When the fava has become creamy, it is ready.

  2. Serve with the fourth onion finely chopped, tomatoes, a few capers, a bit extra olive oil and the lemon juice.

Tips

The island of Santorini is famous for this amazing meze (appetizer). Split peas, fried onions, tomatoes and capers form a harmonious marriage of ingredients, hence the name of the recipe. Fava can be eaten as a dip or you can spread it over freshly baked bread.
