Ingredients

  • olive oil: 2 tbsp
  • vinegar: 1 tbsp
  • salt: pinch
  • water: 1 wine glass
  • all-purpose flour: 2 cups (approx.)
  • FOR THE FILLING
  • salt: pinch
  • anthotyro cheese (or any soft, unsalted, white cheese): 250 g
  • feta cheese: 250 g
  • olive oil: for frying
  • honey: for serving (optional)

Directions

  1. In a mixing bowl, combine the olive oil, the salt, the vinegar and the water. Gradually add the flour and knead until you have a smooth, soft dough.

  2. Cover and set aside to rest at room temperature for at least 1 hour before using it. Roll out the dough into 4 approximately 1-cm-thick circles using a thin rolling pin.

  3. Mix together the ingredients of the filling into a bowl. Spread half of the mixture over one of the dough circles and lay the second circle on top. With slightly wet hands, fold outer edges together and crimp to seal so that the filling won’t spill out while frying. Repeat with the other two dough circles.
