Almonds biscuits (Ergolavi)
For 35 biscuits
- 350g almonds
- 250g sugar
- pinch of salt
- 1tsp vanilla essence
- 35 blanched almonds
- 2 egg whites
Blanch almonds. Dry in oven, mash with mortar and pestle, or pulverize in blender.
Place the sugar, the salt, the egg whites, and the vanilla in bowl. Add the almonds. Blend, using your fingers, into a thick dough.
Shape into biscuits, immerse an almond in the center of each biscuit and place them on a buttered baking sheet.
Bake in preheated 160° C oven for about 20 - 25 min.
