Ingredients

  • For five loaves

  • 5 kg (11 lbs) all-purpose flour
  • 6 sachets of yeast (48 g. - 1.7 oz)
  • 5 cups sugar
  • 2 1/2 teacups of sunflower oil
  • 5 teaspoons salt
  • 15 cups warm water
  • 1 sachet mastic
  • 1 sachet mahleb, crushed

Directions

  1. Pour in a large bowl the water with the yeast, sugar, salt and sunflower oil and stir gently. Then add mahleb that you have grinded in a mortar with a little sugar, mastic and flour. Gently knead the mixture by hand and add a little water if the dough is sticking to your hands.

  2. Divide the dough into 5 equal portions and place in pans No 28, lined with baking paper (cover also the sides of the pans). Leave the dough in the pans for 30' to 40' minutes to rest.

  3. Pierce the dough with a toothpick and bake it in a preheated oven at 200° C (392° F) for 60 minutes or so.
