Ingredients

  • 1k of all-purpose flour
  • 1-1 1/2 glasses of warm water
  • 1 cup of oil
  • juice from a 1/2 lemon
  • Ingredients for filling

  • 1kg spinach
  • 250g chard
  • 250g dill
  • 3 medium sized dry onions
  • 750g feta cheese
  • pepper
  • mint

Directions

  1. Wash the greens thoroughly from the previous night and let them dry on a towel until they wither. The next day, dice and strain them to ensure removal of their natural juices. Add salt, pepper, and mint. Mix all of the ingredients together and add Feta cheese at the end.

  2. Pour the warm water, oil, salt, and lemon juice into a large bowl and slowly add the flour. Using a fork, stir the flour into the mixture until the dough starts forming and knead it in the bowl for approximately 10 minutes, adding a little more flour or water if necessary. The dough must feel light, elastic, and smooth. Let the dough rest and subsequently proceed to roll 6 large sheets of dough.

  3. Grease a pan, lay out three sheets of dough that you have brushed with oil in between the layers, spread the filling onto the dough and cover it with the other three sheets that you have also brushed with oil. Slice the pie and cook at 180º C for approximately 60' until it turns brown.

Tips

Greeks’ favorite pie can be prepared with ready-made pie crust, but homemade dough is simply mouthwatering.
