Meatballs in tomato sauce with mashed potatoes

Ingredients

  • 1 onion, finely chopped
  • 2 cloves garlic, chopped
  • ½ cup parsley, finely chopped
  • 2 slices of bread without crust
  • 1 egg
  • ½ cup olive oil
  • ¼ cup milk
  • ½ cup olive oil
  • oil for frying
  • salt, pepper, flour for sprinkling
  • For the tomato sauce

  • 1/2 cup olive oil
  • 1 onion, finely chopped
  • 1 handful parsley, finely chopped
  • 400-450 g. fresh tomatoes or chopped tomato
  • salt, pepper, a little bit of sugar
  • For the mashed potatoes

  • 1½ kg washed potatoes (do not peel them)
  • 50 g. butter
  • 150 g. Kefalograviera cheese
  • pepper, nutmeg

Directions

  1. Soak the slices of bread in milk and squeeze them well. In a bowl, add the mixed minced pork and beef, onion, garlic, bread, egg, parsley, salt, pepper and half of the olive oil. Mix well with your hands and shape the meatballs . Coat them with flour. Fry in hot oil until browned.

  2. Prepare the tomato sauce as follows: Heat the oil and saute the chopped onion. Add the tomatoes, 1 cup water, salt, pepper and a little bit of sugar. Cook the sauce on medium heat until most of the liquid has been absorbed. Add the meatballs and the parsley in the sauce and cook for 5 minutes.

  3. Prepare the mashed potatoes as follows: Cook the potatoes with the skin, then peel them. Mash them with a fork while they are still hot. Transfer the mashed potatoes in the saucepan, add the hot milk, butter in pieces, pepper and nutmeg. Stir well until the ingredients are evenly distributed. Add the grated cheese and stir again.
