Ingredients

  • bread: 2 slices (without crust)
  • potatoes: 4-5
  • walnuts: 20, shelled
  • garlic: 8 cloves
  • olive oil: 1 cup
  • salt: plenty
  • vinegar: 3-4 tbs.
  • black olives to garnish

Directions

  1. Boil the potatoes in their skins in salted water. Peel them while they are still hot. Soak the bread in water and then squeeze well. In a food processor or mortar, beat the garlic with the salt. Add the walnuts and continue to beat with the pestle or in the food processor.

  2. When the ingredients have mixed well and become a paste, put in the hot potatoes and the bread and pound with the pestle or mix in the food processor. Add the oil and vinegar slowly, constantly beating. 
     
     
  3. Serve in a deep bowl and garnish with olives.
