Ingredients

  • chicken: 1 medium, approximately 1,250 grams 1 ¼ kilo
  • pasta no 2 or 3: 500 gr
  • garlic: 2 cloves
  • onion: 1 large
  • olive oil: 6 tbs.
  • bay leaf: 1
  • tomato: 5-6 fresh, ripe
  • parsley: 2-3 tbs., finely chopped
  • sugar: a bit
  • salt: a bit
  • pepper: freshly ground

Directions

  1. Cut the chicken into portions. Salt and pepper the chicken, heat the olive oil in a large pot and add the chicken. Remove from the pot when browned.

  2. Add the finely chopped onion and the minced garlic and stir. As soon as they begin browning, add the chicken. Wash the tomatoes, peel them, remove seeds and excess liquids and chop them finely. Add them to the pot and then add the sugar and the bay leaf. Simmer for 50-55 minutes and add the parsley.
