Ingredients

  • 1 medium chicken
  • 1 large onion, cut in half
  • 1 bay leaf
  • 1 carrot, thickly sliced
  • 1 celery stalk
  • 1 vegetable stock cube
  • 250g trahana (sweet)
  • 3-4 tbsp butter
  • salt, red and black pepper

Directions

    1. Boil the chicken in a large pot. Add the stock cube, the carrot, celery and onion. Add salt and pepper and leave the chicken to simmer for about 45 minutes.

    2. Remove the pot from the heat, remove the chicken, remove the bones from the chicken, whilst keeping the pot warm. Drain the stock and put it back into the pot. 

    3. Put the pot back onto the heat, add the butter and the trahana and simmer for about 20 minutes, until the trahanas has been cooked and the soup has thickened. Serve the food warm, in deep dishes, sprinkled with red and black pepper.

Tips

Add a little crumbled feta or yogurt to this soup when serving, for a different taste.
