Spinach gratin with bacon, cheese, and sliced bread

Ingredients

  • 700g washed spinach
  • 15 thick bacon rashers
  • a little butter
  • 2 eggs
  • 300g Gouda or any other melting cheese
  • 250ml cream
  • 12 bread slices
  • salt and pepper

Directions

    1. Preheat the oven to 200° C. Grease a 30cmΧ24cm baking dish with butter. Cover the bottom of the dish with half the bread slices (you may need one more to cover any gaps).  

    2. Fry the bacon in a nonstick pan, using a little butter, if needed. Remove the bacon and sautee the spinach until wilted. 

    3. In a deep bowl, mix the bacon and the spinach. Add 200g of the cheese, 1 egg, salt and pepper. Mix well and empty the mixture into the baking dish, over the bread slices, spreading evenly. 

    4. Cover the mixture with the remaining six slices of bread. Sprinkle the rest of the cheese over the bread. Lightly beat the cream with the second egg and pour over the baking dish. Bake for 40-45 minutes until gloden brown. Leave to cool a little and serve.
