Rolled pork with caramelized pears

Ingredients

  • 1 roll of pork (about 2kg)
  • 1 onion, chopped
  • 3 tbsp sugar
  • 300ml dry white wine
  • 2 cinnamon sticks
  • 10 coriander seeds
  • 10 peppercorns
  • peel of 1 orange and 1 lemon
  • 4 pears, peeled and cored, cut in half
  • 2 tbsp sunflower oil
  • 2 tbsp butter

Directions

    1. Add salt and pepper to the pork roll. Heat the sunflower oil and butter and brown the roll on all sides. Transfer to an ovenproof dish and add the onion around it. Cover the dish with tin foil. Bake for 50 minutes at180ο C, until it starts to soften. 

    2. Prepare a caramel sauce, by heating sugar in a pan for 3-4 minutes. Add the wine and then add the cinnamon, coriander, pepper, and orange and lemon peel. Bring the mixture to a simmer and then add the pears. Simmer for 15 minutes, then remove the pears using a slotted spoon. Keep the pears warm and filter the wine. 

    3. Add the wine to the ovenproof dish with the meat, and continue roasting for 40-50 minutes, until you have a thick sauce. Serve the roll whole with the pears, or slice and serve on a serving dish.
