Mixed vegetables in tomato and olive oil sauce
- 1 onion, chopped
- 500g mixed vegetables, fresh or frozen
- 3-4 spring onions, chopped
- 1/2 bunch dill, chopped
- 1 cup olive oil
- 500g tomato juice or chopped tomatoes
- salt and pepper
In a large pot, heat the olive oil and sautee the onion and spring onion until soft. Add the vegetables and dill and sautee at medium heat for 7 minutes. Add 1 1/2 cup water and mix.
After 20 minutes, add the tomato, salt, pepper, and 1 1/2 cup water. Cook for a further 20 minutes until the sauce is thick and the vegetables cooked. Serve with feta and bread.
