Grilled courgettes with tomato and cheese
- 8 large courgettes
- olive oil, for brushing the courgette slices with
- 500g fresh mozzarella
- 1/2 cup olive oil
- 4 large ripe tomatoes
- 3 cloves of garlic, chopped
- 10 basil leaves, chopped
- salt and pepper
Wash and prepare the courgettes for grilling. Remove the ends and then cut the courgettes into thin slices. Brush with olive oil, add salt and pepper, and place on the grill or on a nonstick baking dish. Grill at 220 ˚C for about 8′-10′.
Prepare the filling as follows: Cut the mozarella and tomatoes into thin slices. In a baing dish, place a layer of courgette slices, covering the bottom of the dish.
Then cover the courgettes with tomato and mozzarella slices. Add salt and pepper, garlic and basil. Continue layering with courgettes, tomato, and mozzarella, until you have used up all your ingredients. Add olive oil and grill for 10 minutes at 180°C - 200°C until the cheese melts. Serve immediately.
