Creste di gallo with turkey, honey, and thyme
- 500g creste di gallo pasta (or any other pasta shape you prefer)
- 100ml olive oil
- 150g chopped onion
- 150g sliced mushrooms
- 150g turkey, scented with honey and thyme, cut into cubes
- 200g tomato passata
- 40g fresh basil
- 2 bay leaves
- salt and pepper
- chopped parsley, as a garnish
Cook the pasta according to the packet instructions. Meanwhile, in a pan, heat the olive oil and sautee the onion for 3 minutes.
add the mushrooms and bay leaves and continue sauteeing for a further 2 minutes. Add the tomato passata, turkey, salt, pepper, basil, and mix. Simmer for 5 minutes.
Once the pasta is done, add it to the sauce and mix quickly, adding salt and pepper if needed. Serve on 4 plates. Drizzle with some olive oil and chopped parsley, and serve.
