Chicken drumsticks with olives and feta
- 8 chicken drumsticks
- 6 tbsp olive oil
- juice of 1 lemon
- soem chopped oregano or fresh tarragon
- 10 Kalamata olives
- 100g barrel-aged feta
- 1 stock cube
- salt and pepper
Heat the olive oil and sautee the drumsticks, after adding salt and pepper to them. When well browned on all sides, add the lemon juice and stock cube, the tarragon or oregano, and a little water. Simmer for 35-40 minutes, until most of the water is gone.
Add the olives and feta to the pot. Bring to a boil once or twice, until the cheese softens. Serve with pilau rice or chips.
