Ingredients

  • 6 eggs
  • 300g. all-purpose flour
  • 25g. milk and extra butter or margarine for frying
  • For the syrup

  • 4 cups sugar
  • 3 cups water
  • 2 tbs glucose
  • 1 cinnamon stick
  • 1 tsp lemon juice
  • 1 lemon peel

Directions

  1. Sift the flour to remove any lumps. In a small saucepan, add the butter and four tbsp of water. Cook over medium heat.

  2. When it starts boiling, add the flour with a tablespoon, while constantly stirring for 5' to prevent clotting. Cook for another 5 minutes and then let it cool for a while.

  3. Prepare the syrup as follows: In a small saucepan, add the water, sugar, glucose, lemon peel and cinnamon and cook for 5 minutes. Then, add the lemon juice and cook for another 2-3 minutes.

  4. Beat the eggs with a mixer. In the saucepan, mix well the dough ant the beaten eggs. Shape the dough into small rolls. Heat the butter or the margarine and fry the rolls

  5. Once browned, remove from the pan with a slotted spoon and transfer them into the cold syrup.
